Sometimes, you just want those comfort foods that make you feel good.
Maybe it’s a grilled cheese sandwich and a bowl of tomato soup on a cold winter day. Or some delicious fried chicken or a bowl of chili. Perhaps it’s some homemade chocolate chip cookies or a slice of apple pie.
One thing I love is a good lasagna. That combo of noodles, meat sauce and cheese is easy to make, and will feed me for days.
I hadn’t made one in a while, and thought that with a day off, and my Philadelphia Flyers opening up the new NHL season, it’d be a great time to celebrate by whipping up a pan of deliciousness.
It turned out awesome! It was far more satisfying than the lack of effort shown by my Flyers, who were obliterated 7-0 in their home opener, by the Pittsburgh Penguins! (Because who else would it have been?)
A few years ago, I found a recipe online, that turned out well, and since then, I’ve tweaked it a bit, and it’s now my go-to.
Here it is:

The tweaks I added?
Firstly, the original recipe simply called for ground beef, but I took it upon myself to add a pound of Italian sausage meat to the mix. I mix it with the beef, and it makes for a super-meaty lasagna.
As well, I often swap out the ricotta cheese and substitute in cottage cheese, as I find the cottage cheese gives it a bit more moisture.
And I use about a jar and a half of the pasta sauce (of your choice) in the meat sauce, and then once everything is layered in the pan, I pour the remainder of the sauce over the top layer of noodles, before adding the layer of cheese on top!
And maybe, to spice things up, you might want to top off your lasagna with some grated smoked cheddar cheese, for an extra flavour burst.
The great thing is that once you have the main recipe down, you can get experimental and try out some different things. Maybe you want to thinly dice up a bit of onion and green pepper and add that to the cheese mix. Or add a few bacon bits if you like (I’ve never done that, but why not try it out?)
