While I was at home over the Family Day long weekend, I came home with some leftovers (Thanks, Mom!), including a delicious “stuffed pepper casserole” that Mon tried out for the first tie, and she also sent me back with some hard-boiled eggs, which means one thing… egg salad sandwiches!
So simple, so delicious!
Of course, thinking about all that tasty egg salad got me thinking about “The 40-Year-Old Virgin,” when Andy Stitzer, played memorably by Steve Carell, described his wild weekend whipping up some egg salad of his own. And luckily, I was able to find the shortened version, that isn’t full of Seth Rogen’s F-Bombs! Enjoy!

I do love a good egg salad sammich. As a general rule, the best ones are the ones you make at home, or the ones found at every funeral luncheon! Tell me I’m lying!
I will say, the one bad egg salad I’ve encountered came after a funeral. As you do after the service, you gather for a time of fellowship and light lunch. There are always lots of sandwiches to choose from, and I snagged a few to nosh on while I visited with family and friends.
Of course, I grabbed some egg salad, and when I tucked into it, I was in for an unwelcome surprise… someone had mixed in Italian seasoning with the egg salad.
Nope. No thank you.
Don’t mess with a good thing!
Anyway, tonight I whipped up some egg salad of my own, using my Mom’s simple recipe. Hard bolied eggs, chopped onion, whipped dressing (NOT mayonnaise – there is a distinct difference!), and a bit of salt and pepper. Mix it all up, and you’ve got creamy perfection!

So quick and easy and delicious. When you find that perfect egg salad, you’ll find yourself singing a certain classic by the 5 Neat Guys!
