What’s for supper? How ’bout leftovers!

Reader here, and today, I’ve got one thing on my mind…

That’s right, “Teenage Mutant Ninja Turtles'” Casey Jones!

Whether it’s that you simply had lots of a particular meal left over, or it’s down to good meal prep, I love having leftovers.

It makes life simpler.

The best thing about leftovers, is that it could be anything.  Today, it was, in fact, leftover pizza!

I can eat leftover pizza hot or cold, though I personally prefer to warm it up a bit.  (Two hits of the “pizza” setting on my microwave, to be exact.  Leaves my pizza hot, but doesn’t dry out the crust!)

Or maybe you’ve made roast beef or roast pork, and after enjoying that initial meal, you have lots left over for sandwiches!  I love a good roast beef sandwich, but roast pork sandwiches?  Next level goodness!

Perhaps you made up a casserole, and have enough left for a few day’s meals.  The basic ground beef and potato casserole recipe that my Mom gives me 4-5 good meals out of it.

Make some pulled pork?  For me, I usually make enough for three or four meals, and often have enough that I can throw some in the freezer and save some for those days when I don’t know what to make, and I can pull out the pork, thaw it out, and presto!  Supper is made!

Did you go the takeout route, and have a bunch of delicious Chinese food in the fridge?  Heat up that leftover fried rice, mixed vegetables, chicken balls and egg rolls, and enjoy!

Or maybe my personal favourite… Breaking out the slow cooker and whipping up a batch of chili.  It’s always good the first night, but chili is one of those things that actually gets better after a day or two, because all the the spices and flavour has a chance to really work its way through and take the chili to a new level of deliciousness!

Sometimes for me, and I’m sure it can be the same for a lot of you, I get home and just don’t feel like making something.  Or I meant to make something and forgot to thaw out the meat I needed, or neglected to pick up the required ingredients at the store.

That’s when it’s nice to be able to go grazing in the fridge and realize you still have some of what you enjoyed the day before, neatly placed in Tupperware, and ready to be nuked in the microwave!  It takes the guesswork and decision-making out of the equation and makes the choice simple.

Sometimes, that’s all you need!

Now, if you’ll excuse me, I’m going to whip up some Hamburger Helper for supper.  Some for tonight… and some for tomorrow!
